If you haven’t tried lamb cutlets before, you really should. They are the most delicious thing I’ve tasted in a while.
They cook quickly under the grill, after a short marinade in olive oil and crushed garlic. I used four times as much garlic and was glad I did.
The minty feta dolloped on top and rocket salad made it a meal. Easy and so much better tasting than you’d think for the little effort required.
